| An A/D converter is key, but you want an actual data acquisition device/board. They are rated in bits, which will limit the resolution of the values you are after. You can spend ~$40 on an 8 bit system and get stepwise data or ~$100 to infinity for more bits. I'd go with 10 or 12 to get smooth accurate data. Then you will need one of these three things... onboard amps on the data acquisition board ($$), external amps ($$$), or preamplified sensors aka transducers/senders ($). The latter i prefer but you need a stable excitation voltage from a power supply ($). So you'd need a 0-5V or 0-10V input board with enough channels, an amplified accelerometer, pressure sensor, and a means to monitor rpm (theres probably a premade IC for this) Then you need monitoring/logging software if it didn't come with the board. Your mileage may vary. :)
